Chocolate chip monster cookies

chocolate chip monster cookies

1/2 cup butter
1/2 cup shortening
1 cup brown sugar
1/2 cup sugar
2 eggs
1 1/2 tsp vanilla
2 cups flour
1 cup oatmeal
1 tsp baking soda
1/2 tsp salt
2 cups chocolate chips
1 cup toffee chips
chopped walnuts

Cream butter, shortening, and sugars. Add eggs and vanilla. Mix well. Add flour, baking soda, oatmeal, and salt. MIx in chocolate chips, toffee, and walnuts. Refrigerate for 1 hour. Place on cookie sheet in golf size balls. Bake at 375 for 9-11 minutes. Until just barely brown on top.

Banana Chip Muffins

Banana chip muffins

1 3/4 cup flour
1/2 cup sugar
1 TBsp baking powder
1/2 tsp salt
1/2 cup chocolate chips
1 egg
1/4 cup oil
1/4 cup milk
1 cup mashed bananas

Mix flour, sugar, baking powder, salt, and chocolate chips into a large bowl. Make a well in center. Beat egg until frothy. Mix in oil, milk, and bananas. Pour into well. Stir to only just moistened. Batter will be lumpy. Fill lined muffin tins. Fill 3/4 full. Bake at 400 for 20-25 minutes.

Red Beans and rice

Red beans and rice
2 cups kidney beans, dry
2 quarts water
1 lb sausage
1 onion, chopped
4 stalks celery chopped
2 tsp minced fresh garlic
2 tsp salt
shot of tabasco sauce
hot cooked rice

Soak beans overnight. Boil beans in water until they get tender. Saute onion, celery, and garlic until soft. Slice sausage or brown if using ground sausage. Add to beans. Add salt and tabasco.
Cook another 30 minutes. Serve over rice.

Easy Pie Crust

Easy Pie Crust

2/3 cup canola oil
1/3 cup milk
1 tsp salt
2 cups flour

Blend ingredients gently with fork. Divide in half then roll out each half between sheets of saran wrap. Remove the top sheet of saran wrap. Put empty pie pan upside down on dough and pick up the pie pan with the pie crust in it. Remove other sheet of saran wrap.

Snickerdoodles

Snickerdoodles

1 cup shortening
1 1/2 cups sugar
2 eggs
2 3/4 cup flour
2 tsp cream of tartar
1 tsp soda
1/4 tsp salt
2 Tbsp sugar
2 tsp cinnamon

Heat oven to 400. Mix shortening, sugar and eggs. Add in dry ingredients and mix. Shape dough into 1 inch balls and dip into mixed cinnamon and sugar. Place 2 inches apart on cookie sheet. Bake 8-10 minutes. These cookies will puff up and then flatten out.

Spring is coming! I think. I saw another skunk on the way home from the store today.

Dinner - shepherd's pie,

Breakfast - breakfast croissant, fruit juice
Dinner - pigs in a blanket, homemade fries, carrots

March 17 -
Breakfast - green pancakes
Dinner - OUT - it's my birthday

Breakfast - banana muffins, fruit
lunch - spaghettios, veggies

Beef and Snow Peas

Beef and Snow Peas

1/3 cup soy sauce
1/3 cup chicken broth
2 clvoes garlic, minced
1 lb boneless steak, cut into 1/8 inch strips - I used Elk - cause that's what is in the freezer
1 tsp cornstarch
2 cups fresh snow peas
4 tsp oil, divided

Combine soy sauce, broth, and garlic. Reserve 1/4 cup. Place beef in ziploc bag. Add remaining soy mixture. Seal and mix. Refrigerate at least 1 hour. Place cornstarch in small bowl. Stir in reserved soy sauce mixture until smooth. Set aside. In skillet, stir fry snow peas in 2 tsp hot oil for 3-4 minutes or until peas are crisp tender adn bright green. Remove and keep warm. Drain and discard marinade from beef. In same skillet, stir fry beef in remaining oil for 2 minutes. Stir cornstarch mixture and add to skillet. Bring to boil. Cook and stir for 1-2 minutes or until slightly thickened. Combine with snow peas. SErve with rice.
